Ingredients:

1 kg chicken (cut into serving pieces)

1/2 cup soy sauce

1/3 cup vinegar

1 cup water

6 cloves garlic, crushed

2–3 bay leaves

1 tsp whole black peppercorns

1 tbsp cooking oil

1 tsp sugar (optional)

Salt to taste
Instructions:

Marinate chicken in soy sauce, garlic, and pepper (30 mins or overnight).

Sauté garlic in oil until golden.

Add chicken, pan-fry until lightly browned.

Add marinade, vinegar, bay leaves, water. Bring to boil (no stirring yet!).

Simmer 30–40 minutes until chicken is tender and sauce reduces.

Add sugar and salt to taste.
